About the Cover
Across the country, mobile food units (MFUs) are a rapidly growing trend in the culinary industry. This issue’s cover article surveyed MFU owners in a North Carolina county to better understand their demographic composition and operations. Survey results indicate that MFU owners face various challenges related to language accessibility and to the complexity of regulations and operating locations. Providing more multilingual resources and intercounty coordination of operating compliance and location would enhance regulatory oversight and MFU support.
